His dishwasher comment needs to be put in context with the fact he's teaching for commercial kitchens, and there is an entire block of Dexter-Rusell's at the ready for the brigade. This isn't a "What to do at home" kind of presentation/ If I'm in a kitchen, using the business equipment- The dish washer takes care to groom the kitchen, not the chef. Don't put your own knives in the dish-washer - Correct. But commercial Dexters? So what if they're abused - They get serviced bi-weekly anyway.
