It's from the extras on the either the first or second DVD, The first has a video called 'Music of Middle Earth', an the second has one called 'Designing The Sounds of Middle Earth'.

If you search "creating Lord of the rings" it should come up, or just "Howard Shore". The guy who posted those 1-5 videos is very nice and very helpful. He'll tell you where he got them.
