Ha, shows how little you know. Sugar is never used by good pizzamakers, EVER! Do some reasearch. I am a pizzamaker and can tell you, Heston doesn't really know how to make pizza. The Neapolitan rule is that the dough can contain nothing but flour, water, salt and yeast, period! Look it up. Sugar is used by people thaqt don't know what they are doing.

Heston is great but he is way off on the pizza. His dough is not right at all. He makes a lot of other rookie mistakes as well like putting way too much flour on his peel. That will leave too much flour on the bottom of the pizza where it will burn and get bitter at very high temperatures. His dough is bad. A real pizza dough should have nothing but flour, water, salt and yeast. Definitely no sugar and no malt. His dough is much to dry as well and he added wet to dry instead of dry to wet.
