You can't. The game zooms in and out depending on the camera. If you are near a wall, the camera gets near the truck or else it would get hidden by the wall. So it's an auto-zoom, not manual. Too bad, it would be good to be able to zoom.

I have no idea, I'm sorry. But I don't see why you couldn't. Basically are the same thing, but G25 has H gearbox and the third pedal. I guess it should work fine. Anyway you could try a search on the net about it to make sure.
